I’ve had hot rods and race cars a long time ago. The things we did is now standard equipment. I’ve had my 2014 CTS V Coup going on two years. Got it looking good now I’m trying to find out what has been done to it. Also the question of putting on a oil catch can is a big one. Good debate goes both ways. It has a E 85 sensor but I have no idea how to use it or if I should. I’m hoping to get some ideas and maybe some answers.

Welcome. If you've had it two years I would think the tune is relatively safe. I would still contact a good tuner who could check what injectors you have and if the fuel system has the capacity for the increased load with E85.

DEFINITELY going to need some PICS!\
Show us some pics of under the hood, the engine in general plus the exhaust system, heat exchanger(s) in front of the radiator, let's see what we can determine just visually, about any installed upgrade parts.
Parts with logos or brand markings other than Cadillac? Green blower belt?
