OEM oil/air separator?

New to this V but not new to GM small blocks. I see from looking at the PCV hoses and a GM parts blow apart there is a stock "catch can" if you will. How does this work and where does the oil that's caught go? Should I still install a catch can? Every GM engine I've ever ran caught a ton of water and oil in the catch can.
