So I have a 2012 CTS V 53,000 miles, whenever I smash on the gas, either at a light or on the highway I always see a good size black cloud of smoke, but only for about a couple seconds. Oil levels look normal, no trouble codes.

Black smoke is unburned fuel. Tune is likely on the rich side.

They beat me to the punch. Log your fuel trims to see what is going on.

Do you have upgraded injectors?

Ditto on the unburnt fuel. Tune is proly a bit too fat.

Its called an “Italian tune-up”. Cleans out the valves and pipes.
It's only an Italian tune-up if the problem goes away after you thoroughly thrash it. Sounds like it got a toon-up instead.
